Coconut Cupcakes
Makes: 10

Ingredients:
- 1.5 cups Shredded Coconut
- 2 Tbs Margarine
- 3/4 Cup Milk
- 2 Eggs
- 1/2 Cup Sugar
- 1 Cup Self Raising Flour
- 1 tsp Coconut Essence
- 1/2 tsp Baking Powder
Method:
- Preheat oven to 180 degrees
- Melt the margarine in the microwave (takes about 20 seconds). Place into a mixing bowl with the sugar. Using a fork, combine the ingredients. Add 2 eggs. Beat with fork
- Gradually add milk and coconut essence, stiring as it is being added.
- Gradually add shredded coconut, stiring as it is being added. Do the same with the flour and baking powder.
- Spoon mixture into cupcake patty pans, filling to approx 3/4 (this will make sure they do not “spill over” while baking). Bake in the oven for 20 minutes or until a knife can be inserted and removed without any mixture on it.
I made this recipe up…. No really. I did. You may add more coconut essence if you want it really coconutty, or you could add some lemon juice!
