Recipe – Coconut Cupcakes

Coconut Cupcakes

Makes: 10

Ingredients:

  • 1.5 cups Shredded Coconut
  • 2 Tbs Margarine
  • 3/4 Cup Milk
  • 2 Eggs
  • 1/2 Cup Sugar
  • 1 Cup Self Raising Flour
  • 1 tsp Coconut Essence
  • 1/2 tsp Baking Powder

Method:

  1. Preheat oven to 180 degrees
  2. Melt the margarine in the microwave (takes about 20 seconds).  Place into a mixing bowl with the sugar. Using a fork, combine the ingredients.  Add 2 eggs.  Beat with fork
  3. Gradually add milk and coconut essence, stiring as it is being added. 
  4. Gradually add shredded coconut, stiring as it is being added.  Do the same with the flour and baking powder.
  5. Spoon mixture into cupcake patty pans, filling to approx 3/4 (this will make sure they do not “spill over” while baking). Bake in the oven for 20 minutes or until a knife can be inserted and removed without any mixture on it.

I made this recipe up…. No really. I did.  You may add more coconut essence if you want it really coconutty, or you could add some lemon juice!
